It's cold! Burr! Want something delicious, versatile, that warms up the insides and is halfway okay to indulge in? How about some sweet rice!
Sweet rice is great! It can serve as a hot breakfast cereal instead of oatmeal or cream of wheat, or it can also be a dessert at the end of the day. Serve it hot or cold, it's the perfect meal, snack, or dessert. (When storing, place a wet paper towel into the container covering the rice to preven it from drying out.)
Today's recipe uses two cups of purified water
two cups of instant rice (I'm too lazy to do it the proper way!)
Three table spoons of powdered sugar
Half a teaspoon of cinnamon
1 teaspoon powdered vanilla
1 half teaspoon lizquid vanilla extract
1/2 cup diced peaches
1/2 cup diced pears
1/2 cup diced pineapple
1 tablespoon of butter
Add all ingrediants except for the rice into your pot and set that sucker to boil. Once it's at a nice rolling boil, go ahead and add your rice and stir it around. Bring it back to a boil, cover it and turn it off. When the rice is nice and tender and all liquid is absorbed, it's ready!
We've made this with 1 teaspoon of cocoa powder instead of cinnamon, and using nuts instead of fruit.

This is one of those recipes that is extremely versatile. You can do it with just about anything. It satisfies that sweet craving without indulging in candy or cookies. Chill it, and it's a perfect cold treat for summer. Warm it up, and it's a great breakfast cereal or hot treat for winter. Add in peppermint extract instead of vanilla, and you have a great Christmas treat.

If you're using apples and raisins, replace the powdered sugar with brown sugar!
ReplyDeleteI make this with leftover cooked rice, milk sugar, and pumpkin pie spice. Sometimes I throw in canned pumpkin or mashed sweet potato. mmmm......
